The muffins
Preheat oven to 350.
3 bananas, mashed
3 eggs
1/4 cup of vegetable oil
1/4 cup of honey
1 T white sugar
2 t vanilla extract
1/3 cup applesauce
1/4 t salt
1 cup 1:1 gluten free flour (Bob’s Red Mill)
1 cup coconut flour
1 t baking soda
A half or so of a bar of chocolate, rough chopped
Mash bananas and then mix with wet ingredients in first section. A stand mixer is fire for this. Whisk dry ingredients in second section. Add dry to wet and mix well. Toss in your chocolate chunks and fold in with a spoon.
Load batter into muffin tins (prep with vegetable oil to prevent sticking). Bake until you can smell them, they are golden, and a toothpick comes out clean.
Let cool. Even better after sitting in an air tight container at room temperature for a day or so!
