The pancakes
Heat a pan or griddle to medium while you look for the rest of these ingredients.
1 1/3 cups of all-purpose flour
3 T sugar
1 t baking powder
1 t baking soda
1 t kosher salt
2 large eggs
1 1/4 cups milk
2 T unsalted butter, melted
Neutral oil for pan/griddle
Butter for top of pancakes
Pure maple syrup
Whisk dry ingredients. Whisk wet ingredients separately. Stir wet into dry until just combined. Lumps desired.
Add oil to pan intermittently when needed. Flip when bubbles pop. Serve with extra butter and maple syrup.
